Chicken and Herbs
This fresh herb medley amplifies the already great reputation of chicken. This recipe is best for the grill. You can bake it, but grilling really sets this recipe apart.
Ingredients:
3 pounds (1.361 kg) whole chicken, cut up
2 tablespoons (30 mL) fresh rosemary
1 tablespoon (15 mL) fresh oregano
1 tablespoon (15 mL) fresh chives
1 teaspoon (5 mL) salt
1 teaspoon (5 mL) black pepper
2 cloves garlic
1/2 cup (125 mL) olive oil
Cooking It:
Grill:
Heat up the grill. Combine oil, rosemary, oregano, chives, garlic, salt, and pepper. Place in blender and blend until smooth. Rub herb mixture on to all the surfaces of the chicken. Put the chicken on the grill. Cook for about 20 minutes. Turn chicken over and cook for another 20 minutes.
Bake:
Pre-heat oven to 375 degrees F (190 C). Place chicken in a 13 x 9 x 2 inch (33 x 23 x 5 cm)baking dish. Bake for 50 minutes. Check to make sure the pieces are fully cooked before serving.
