A Rub for Pork
A rub with fennel and rosemary to give pork just enough flavor to savor.
Ingredients:
1 pound (450 g) pork shoulder
1 teaspoon (5 mL) kosher salt
1 teaspoon (5 mL) smoked paprika
1/2 teaspoon (2 mL) fennel seeds
1/2 teaspoon (2 mL) dried rosemary
1/2 teaspoon (2mL) ground black pepper
zest of one lemon
Cooking It:
Pre-heat the oven to 250 degrees F (120 C). Combine the spices and herbs and rub on to the pork. Place in a baking dish (I prefer a glass one for this recipe). Bake for an hour.
