Slaw with Bok Choy
Where’s the cabbage? That’s in another slaw recipe. This recipe has bok choy to make a tangy vegetable side.
Ingredients:
3 cups (750 mL) chopped bok choy
1 cup (250 mL) shredded carrots
1 scallion, chopped
For Dressing:
2 teaspoons (10 mL) sesame oil
2 teaspoons (10 mL) rice vinegar
1 teaspoon (5 mL) mustard
1 small clove of garlic, finely minced
1/2 teaspoon (2 mL) sugar
1/4 teaspoon (1 mL) salt
(Not) Cooking It:
Combine all the ingredients for the dressing in a large bowl and stir until well mixed. Add the bok choy, carrots, and scallions. Stir and mix.
