Sweet Pineapple Mash
This sweet pineapple mash is unlike anything else you can legally do with a pineapple. It is not quite like a pudding, not quite like a sauce, but it is delicious! Credit to my mother for inventing it.
Ingredients:
one 28 ounce (794 g) can crushed pineapple
one 13.5 ounce (400 mL) can coconut milk
one can sweetened condensed milk
1/4 cup (60 mL) sugar (yes, more sugar!)
1 tablespoon (15 mL) butter divided
4 ounces (120 g) raw cashews
1 ounce (30 g) raisins
3 whole cloves
1/4 teaspoon (1 mL) ground cardamom
Cooking It:
Put the crushed pineapple in a blender and puree the h3!! out of it. Then heat 1/2 (7.5 mL) tablespoon of butter in a pan. Add the pineapple and cook it, stirring frequently until all the water is gone. Add the sugar, sweetened condensed milk and the coconut milk and continue stirring until you start cursing this recipe. Keep going, it’s worth it.
In a separate pan, heat the remaining butter, cashews, and raisins. Cook on low heat for five to seven minutes. Don’t forget to stir a few times (the secondary theme of this recipe).
Add the cashews and raisins to the pineapple. Add the cloves and cardamom. Stir it for a couple of minutes.
Serve in small bowls and get ready for pineapple heaven.
