Green Beans with Coconut
It’s time to expand the boundaries for green bean recipes. This is a flavorful green bean recipe from southern India.
Ingredients:
1 pound (450 g) green beans, finely chopped
2 tablespoons (30 mL) grated coconut
2 teaspoons (10 mL) vegetable or coconut oil
1 teaspoon (5 mL) brown mustard seeds
1 red chili pepper, cut in half lengthwise [or 1/2 teaspoon (2 mL) red pepper flakes]
1/2 teaspoon (2 mL) salt
Cooking It:
In a large saucepan, heat the oil using a low flame and add the brown mustard seeds. Cover and heat until the brown mustard seeds start popping. Add the chili pepper, salt, and the beans. Add a tablespoon of water. Cover and cook on low until the beans are tender. Add the coconut flakes for the last couple of minutes of cooking.
