Pineapple Chicken
A unique variation on chicken. Pineapple combines with cloves and honey to give this chicken “sweet” cred. Yes, that was a bad pun, but let’s move on shall we.
Ingredients:
1 1/2 pounds (680 g) of chicken breast, cut up
4 whole cloves
8 ounces (225 g) crushed pineapple
1/2 cup (125 mL) light brown sugar
1 tablespoon (15 mL) honey
1/4 cup (60 mL) vegetable oil
flour
Cooking It:
In a large bowl, combine the cloves, pineapple, brown sugar, and honey. Stir until well blended. Heat the oil in a large skillet over a low flame. Lightly coat the chicken with flour. Add chicken to skillet and slowly cook until brown on all sides. Pour the pineapple mixture over the chicken. Cover and simmer for 30 to 40 minutes.
