Baked Chicken and Stuffing

Baked Chicken and Stuffing

Chicken broth, stuffing and a few more ingredients make for a simple filling meal that is easy to prepare.

Ingredients:

1 pound (450 g) boneless skinless chicken breast cut into bite sized pieces

1 small yellow onion, finely chopped

1 clove garlic, chopped

2 carrots, chopped

2 celery stalks, chopped

1 teaspoon (5 mL) dried basil

1 teaspoon (5 mL) black pepper

1/2 teaspoon (2 mL) dried parsley

6 ounces (170 g) low sodium stuffing mix (see below)

1 cup (250 mL) low sodium chicken broth

Cooking It:

Pre-heat oven to 400 degrees F (200 C). In a 2 1/2 quart (2.3 L) baking dish, combine the stuffing mix and the chicken broth. Add the remaining ingredients and mix thoroughly. Cover and bake in oven for 30 minutes.

One brand that works well for this recipe is Stove Top Stuffing Mix for chicken. The lower sodium version is what I use.
