Spicy Spinach
A spinach dish with pizzazz!! Like all tasty vegetable recipes, this one involves frying. This recipe is a variation of one found in southern India.
Ingredients:
16 ounces (450 g) fresh spinach leaves, chopped
1 yellow onion, chopped
1 inch (2.5 cm) fresh ginger root, chopped
2 green chili peppers , seeds removed and chopped
1 tablespoon (15 mL) cumin seeds
1 teaspoon (5 mL) salt
1 tablespoon (15 mL) vegetable oil
Cooking It:
Heat the oil in a pan over medium flame. Add the cumin seeds. Cook for a couple of minutes. Add the onion, ginger, and green chili peppers. Cook until onion is translucent. Lower the flame and add the spinach. Cook until the spinach becomes wilted.
