Split Pea and Bacon Soup

Ingredients:
1/2 pound (227 g) of bacon
12 ounces (340 g) of dried split peas
3 carrots, chopped
one yellow onion, finely chopped
2 teaspoons (10 ml) herbs en Provence
1 teaspoon (5 ml) Tajin Classico seasoning
1/2 teaspoon (2 ml) dried basil
1/4 teaspoon (1 ml) black pepper
64 ounces (1893 ml) vegetable broth
Cooking It:
In a stock pot, add the bacon and cook for about 10 minutes. Add the onions, carrots, herbs en Provence, Tajin, basil, and black pepper and cook for another 5 minutes. In a food processor, add the spit peas and two cups of water. Puree the peas. Add the peas and vegetable broth to the stock pot. Simmer for 20 to 30 minutes.
