Italian Style Baked Chicken
A recipe for chicken that holds up the Italian tradition for great food. This one is a little heavy on garlic, but that can be adjusted for taste.
Ingredients:
1 pound (450 g) chicken breasts
1 tablespoon (15 mL) extra virgin olive oil
2 tablespoons (30 mL) fresh basil leaves, chopped
1 tablespoon (15 mL) fresh oregano, chopped
1 tablespoon (15 mL) fresh tarragon, chopped
2 teaspoons (10 mL) salt
1 teaspoon (5 mL) ground black pepper
Cooking It:
Preheat the oven to 350 degrees F (180 C). In a bowl, combine the oil, garlic, basil, oregano, tarragon, salt, and pepper. Dip the chicken breasts in the bowl to coat in mixture. Place chicken breasts in a 13 x 9 x 2 inch (33 x 23 x 5 cm) baking pan. Cover with foil. Place in oven and bake for 45 minutes.
